Is it possible to pre-program SC to slew to an object and take photos at a particular time of night? ie. Can one automate that process?

yes, there are ways to do this - the 'Deep Sky Sequence Planner' provides an easy way to set this up, but does not include the delay feature you are looking for (or a way to have multiple objects imaged in order). See https://docs.sharpcap.co.uk/4.0/#!2!Dee ... %20Planner
The SharpCap Sequence Editor gives much more power and flexibility, including delaying until the desired time, working through a list of targets from a text file, etc, but is a more advanced tool that requires more time to learn and master - https://docs.sharpcap.co.uk/4.0/#The%20 ... e%20Editor . You can take a plan from the sequence planner and export it into the full sequence editor to give you a starting point for more tweaking though.
