On screen view not matching Video clip & dinamic range

When using the 183mc camera and shooting the moon with my Evostar72 ed, the image on the screen is very different than the video clip. The screen view shows the very darks and the very lights and not much in between. So I am forced to shoot short clips view and change setting and do it again until I get workable settings. Any suggestions?
Also, I cannot image the full contrast between the very brights and the very darks. For instance I was shooting the area of maria on the eastern side of the moon a day or so after Full and I could not get enough exposure on the craters near the rim between the terminator and and night without over exposing to white the brightest features of the whole moon. Again, suggestions?
