Basically, it stays stuck in 'stage one'.
I did the best I could - I aligned it 'correctly' with it pointing south, the right degrees, and yet it doesn't seem to be within the 5-7 degrees it insists on.
I have shifted where I set up, but am still having trouble...
Am I pointing at the right spot?

Unfortunately your links to astrometry.net don't seem to have come out correctly
If you can fix the links I will have a look, otherwise tried to post the image that you uploaded to be plate solved and if possible a screenshot of SharpCap showing the polar alignment tool at the bottom when you are stuck.
