I apologize for this question (seems I should know this). A friend advising me on taking flats suggested I use RGB24 with maximum resolution for my ZWO294 camera. What and how do I set maximum resolution in Sharpcap?

SharpCap will automatically start the camera in the maximum resolution (about 3700 by 2770 for this camera) unless you happen to have changed to a lower resolution previously and then SharpCap may have remembered that option from the last time around. Anyway, just check that the ' Capture Area' control on the right-hand side is set to the largest possible value.
I personally would capture flat frames in RGB24 – I'd probably use the RAW16 option to make sure that I got the most information out of each frame. Just make sure that you process the flats into RGB format and then mono after capture.
