I don't have that much experience with program/sequence for SharpCap, so that's for others to answer
Your question on the framerate depends on your equipment and settings in SharpCap.
The framerate (FPS) depends mainly on your exposure time. You can get higher FPS with shorter exposure times and lower FPS with longer exposure times. So in essence, you "program" the framerate with the exposure time. But how much that is, really depends on your telescope and camera. For example: a telescope with a larger aperture can likely have higher FPS because it gathers more light. It's a matter of experimenting and finding the balance between good quality of your capture and FPS.
How many frames the video will have, depends on your framerate. Lets say you want to capture a 1 minute video with 20 FPS. That gives 20 frames x 60 seconds = 1200 frames.
There is a rule of thumb though that I know of when you want to stack the frames of a video: a maximum of around 60 seconds. This because when your video is too long and you want to stack all the frames into 1 image, the rotation of Jupiter becomes visible.
