I am using a ZWO 183 camera with an 8” Schmitt-Cass and Hyperstar. My skies are semi-rural, and my primary interest now is imaging galaxies. I typically use 30 second exposures, for about 5 - 10 minutes total exposure. What gain setting would be appropriate for this?

this is the sort of question that can be answered by using the Smart Histogram functionality in SharpCap - https://docs.sharpcap.co.uk/3.2/#Smart%20Histogram
It will measure your sky brightness and combine that with the characteristics of your camera sensor to work out the best settings.
